Staying Home + My Rotisserie Chicken Challenge

Hey fellow quarantiners! I wonder if you are being as resourceful as I am trying to be….and surprising myself! Doing my own nails, highlighting my own hair, and yes……cutting my own hair….are my most recent activities.

This cutting my own hair thing is a daily event. Watching you tube videos of people cutting their own hair and other people’s hair has been entertaining but hasn’t helped, and I definitely don’t recommend it. My hair dresser, Devin, is going to shit herself when she see’s what I’ve done to my hair. I’m not quite sure what I’ve done either…

I did cut Steve’s hair the other evening after cocktails and every morning check to see which side needs evening up. He’s been super patient. Yesterday he told me that he thought his hairline was receding….I told him that it was probably his new haircut and maybe we should let it grow a little….What I really meant to say is that maybe we should do haircuts before cocktails?

My son and new daughter-in-law, who just got married in their home last weekend, have been our personal shoppers. I worry about them… As nursing home administrators, Jeffrey & Mackenzie are both on the front lines so I’d like to keep my grocery list short giving me a new challenge….which is also keeping me away from haircutting for a bit…..

MEALS CAN YOU MAKE WITH ONE ROTISSERIE CHICKEN

There is nothing more delicious than a fresh, hot, store bought grocery store rotisserie chicken…Even smelling it in the car on your way home makes my mouth water…

Meal 1. I pull the thigh/leg off and serve it with any side. No magic, but delicious. Cut up the leftover chicken and tuck it in the fridge for the next creation..

CHICKEN ENCHILADAS

Super easy and delicious…add fresh or frozen spinach & corn if you like…

Ingredients:

  • 1 can diced tomatoes in juice (14.5 oz.)
  • 1 Tbsp. chopped garlic
  • 2 Tbsp. olive oil1  Tbsp. all-purpose flour
  • 2  Tbsp. chili powder
  • 2 tsp. ground cumin
  • 1 cup low-sodium chicken broth
  • Salt and black pepper to taste
  • 2 cups shredded cooked chicken
  • 1 can diced tomatoes, drained (14.5 oz.)
  • 1/2 cup diced onion
  • 2 cups shredded Cheddar, divided
  • 8 flour tortillas (8-inch)

Directions:

Preheat oven to 350°.

For the sauce, purée tomatoes in juice, chopped onion, and garlic in a food processor.

Heat oil in a large saucepan over medium. Stir in flour, chili powder, and cumin; cook 1 minute.
 
Whisk in puréed tomato mixture and broth; bring to a boil.
 
Reduce heat to medium-low and simmer sauce until thickened, 15–20 minutes, stirring occasionally.
 
Season sauce with salt and pepper and let cool. 

For the filling, combine chicken, drained tomatoes, diced onion, and 1 cup Cheddar with 1/2 cup sauce to coat.

Spread 1/2 cup sauce in bottom of a 9×13-inch baking dish. Place
1 tortilla into dish, spread on 1 Tbsp. sauce, and flip.

Scoop 2 Tbsp. filling onto tortilla, and roll to enclose.

Place tortilla, seam side down, in the dish.

Repeat saucing, filling, and rolling with remaining tortillas.

Top enchiladas with remaining sauce and 1 cup Cheddar.

Bake enchiladas until Cheddar melts and sauce is bubbly, 30 minutes; let cool slightly before serving.

CHICKEN POT PIE WITH PHYLO CRUST

So easy and delicious! Substitute the phyla with refrigerated pie crust  for an easy alternative.

INGREDIENTS

  • 8 oz.cremini or button mushrooms, quartered
  • 1 Tbsp. minced fresh thyme
  • 6 Tbsp. unsalted butter
  • 1/2 cup all-purpose flouR
  • 1/2 cup dry sherry
  • 2 cups low-sodium chicken broth
  • 1  cup whole milk
  • 2  tsp. fresh lemon juice
  • Salt, black pepper, and dry
  • sherry to taste
  • 2 cups chopped cooked chicken (rotisserie)
  • 2 cups frozen mixed vegetables, thawed and patted dry
  • 1/2 cup frozen pearl onions, thawed and patted dry
  • 4 Tbsp. each unsalted butter and olive oil
  • 16 sheets phyllo dough, thawed to room temperatureMAKE IT!

DIRECTIONS:

  1. Preheat oven to 400°. Line a baking sheet with foil.
  2. Cook mushrooms and thyme in 6 Tbsp. butter in a sauté pan over medium heat until browned and liquid nearly evaporates, about 10 minutes. Stir in flour and cook 1 minute.
  3. Deglaze pan with 1/2 cup sherry; cook until nearly evaporated. Whisk in broth and milk; cook until thickened to desired consistency, 10–12 minutes.
  4. Add lemon juice; season with salt, pepper, and sherry.
  5. Transfer mushroom mixture to a large bowl. Stir in chicken, mixed vegetables, and onions.
  6. Divide mixture among four  baking dishes arranged on prepared baking sheet.
  7. Heat 4 Tbsp. butter with oil in microwave until butter melts. Place a phyllo sheet on a flat surface; cover remaining sheets with a damp towel to keep them from drying out.
  8. Lightly brush phyllo sheet with butter-oil mixture; roll into a loose tube. Repeat brushing and rolling with 3 more phyllo sheets, then starting at outer edge, place 4 phyllo tubes end to end in a spiral pattern on top of filling. Repeat phyllo steps for each pot pie. Drizzle any remaining butter- oil mixture over phyllo or coat with nonstick spray.
  9. Bake pies until crust is golden and filling is bubbly, about
    20 minutes. Let pies cool 5–10 minutes before serving.

Depending upon the width of your dishes, the number of phyllo sheets needed may vary by one or two.

Creamy Pesto Lasagna with rotisserie chicken

Serves 12

Use no-boil lasagna sheets or regular sheets (cook them 5 minutes before assembling) Also, add spinach for added nutrition.

 

Ingredients:

FOR THE BÉCHAMEL

  • 4 Tbsp. unsalted butter
  • 1/4 cup all-purpose flour
  • 3 cups whole milk
  • 1/4 tsp. ground nutmeg
  • 1/2 cup purchased refrigerated basil pesto
  • Salt and black pepper to taste

FOR THE LASAGNA

  • 1 pkg. whole-milk ricotta cheese (15 oz.)
  • 1 cup grated Parmesan
  • 1/2 cup purchased refrigerated basil pesto
  • 12 dry, flat, no-boil lasagna sheets
  • 3  cups diced rotisserie chicken, divided
  • 4  cups shredded part-skim mozzarella, divided

Preheat oven to 350°.
For the béchamel, melt butter in a large saucepan over medium heat.

Whisk in flour and cook 2 minutes.

Slowly whisk in milk and nutmeg, bring to a simmer, and cook 2 minutes more.

Off heat, stir in 1/2 cup pesto; season with salt and pepper.

For the lasagna, stir together ricotta, Parmesan, and 1/2 cup pesto; season with salt and pepper.

Spread 2/3 cup béchamel in bottom of a 9×13-inch baking dish.

Lay 3 lasagna sheets side by side, top with 1/2 cup ricotta mixture,
3/4 cup chicken, 2/3 cup béchamel, and 3/4 cup mozzarella.

Repeat layering three more times, topping the final layer with 11/2 cups mozzarella.

Cover lasagna with foil. Bake lasagna until bubbly, about 45 minutes.

Remove foil and bake lasagna 15 minutes more, then broil on high until golden, 2–3 minutes.

Let lasagna rest 15 minutes before serving.

Staying home and staying safe have become part of our new normal.

Making a list of things to accomplish each day has helped relieve boredom and frustration and gives me a sense of accomplishment.  Organizing those boxes of pictures into labeled baggies or photo albums, making boxes of clothing and other items to be donated (there will be a huge need), and finding delicious recipes with items shoved into the back of the pantry are this week’s list.

Cheers to hoping that this will get better. If we all do our part in keeping our distance and staying home, we hope this will pass.

A Little Food for Thought

I spent most of last week scrambling from store to store engaging in my own version of “Say Yes to the Dress” hoping to find the perfect dress for my son’s upcoming wedding. Little did I know that I was successfully exposing myself (and my family) to God knows what and hoping this invisible enemy would just disappear. The good news….I found the dress…The bad news….The wedding is off, or postponed for now.

My husband, Steve is happy because all of the ‘say no to the dresses’ have been successfully returned and the credit card is tucked away….for now.

What is the take away? Stay positive, worry about what we can control, and turn off the tv after the Today Show.

For me, self quarantining is a great time to search out recipes to share! Technically, I should be offering immune boosting recipes, but today, since our restaurant choices are limited, I found some great ‘restaurant quality’ recipes to share. Check this twist on chicken Parm from Cuisine Magazine!

Chicken Parmesan Roulades 

with Fresh Tomato Sauce and Caesar Salad

For the roulades—

  • 8 boneless, skinless chicken breast halves pounded thin (6 oz. each)
  • Salt & Pepper to taste
  • Fresh Mozzarella sticks cut into eight, 2″ long pieces

For the coating—

  • 1 C. panic bread crumbs (I use Italian blend)
  • 1 C. Parmesan cheese shredded
  • 1 T. minced fresh parsley
  • 1/4 C. all purpose flour
  • 1 egg, beaten
  • 1/2 C. olive oil

For the sauce—

  • 1 C. chopped onions
  • 1/2 t. red pepper flakes
  • 3 C. cherry tomatoes
  • 1/4 C. chopped fresh basil
  • Salt to taste

serve WiTh:

Caesar Salad, 
1/2 cup Parmesan, shredded

DIRECTIONS:

  • Preheat oven to 400* & coat a baking sheet with nonstick spray.
  • Halve the chicken for the roulades.
  • Season & roll each with a piece of mozzarella.
  • Combine panko, Parmesan cheese & parsley
  • Dredge roulades in flour, dip in egg and coat in panko mixture.
  • Roast in the oven 10 min.
  • Sautés in skillet with 2T olive oil

FOR THE SAUCE:

Saute onions and pepper flakes in a sauce pan 2-3 min.

Stir in tomatoes and cook until slightly thickened 8-10 min.

Season with basal and salt.

TO SERVE:

Place roulade on top of Caesar salad, spoon tomato sauce on top, and sprinkle with Parmesan.

CAESAR SALAD

Makes 10 cups; Total time: 15 minutes

Mash TogeTher:

11/2 t. garlic, minced
1/4 t. kosher salt

Whisk in:
1/4 cup Parmesan, grated 2 T. fresh lemon juice

1 T. mayonnaise
1 t. anchovy paste
1 t. Dijon mustard
1 t. Worcestershire sauce
1/2 t. black pepper
1/4 cup olive oil
Toss WiTh:
10 cups romaine lettuce, chopped

Mash garlic and salt together with the flat side of a knife blade until it forms a paste,  Whisk remaining ingredients together with the garlic paste until combined. Toss the romaine with the dressing just before serving.

Every day my daughter FaceTimes me with our 18 month old grandson doing everything from dying spaghetti noodles to finger-painting cards and mailing them to family members. Working full time from home and being so resourceful, I marvel at her positive outlook and commitment.

It’s a lesson. Without being preachy and trite….cheers to health and watching out for each other while doing the right thing…..Stay home….Stay healthy.

Turkey Burgers with a (huge) Splash of Teriyaki

My search to spice up everyday meals have two requirements….they have to be super quick and super flavorful. This great recipe for a juicy and delicious turkey burger tickled my fancy.

I loved the combo with the pineapple, but it turned the bun into huge mess. My Steve wasn’t a huge fan of the pineapple, so he ate it on the side wrapped in a lettuce bun. I also went a little crazy with the Soy Vey Very Teriyaki, actually a lot crazy….the whole bottle at the end. LOVED IT!

TERIYAKI TURKEY BURGERS with GRILLED PINEAPPLE

Makes 4 burgers


COMBINE: 

  • 1 egg 
  • 1/2  cup dry bread crumbs
  • 1/3  cup diced onion
  • 1 Tbsp. minced fresh garlic 
  • 4 Tbsp. teriyaki sauce, divided 
  • 1/4 tsp. onion powder 
  • 1 lb. ground turkey 

GRILL: 

  • 8 oz. sliced fresh pineapple or 1 can (8 oz.), drained 
  • 4 hamburger buns, split, buttered, and toasted (I recommend wrapping in lettuce)
  • Green leaf lettuce 
  • Teriyaki sauce, (Soy Vey Very Teriyaki) 
  • Preheat grill to medium.
  • Combine egg, bread crumbs, onion, garlic, 2 Tbsp. teriyaki sauce, and onion powder in a bowl. Add turkey and mix until combined; shape 
  • Baste patties with remaining 2 Tbsp. teriyaki sauce (or the rest of the bottle) during the last 5 minutes of cooking.
  • Grill pineapple slices until grill marks appear, 3–4 minutes per side. Assemble burgers on buns with lettuce, or wrap in lettuce, pineapple, and additional teriyaki sauce.

Heirloom or Clutter…+ A New Twist on an Old Favorite…Chicken Parmesan as a muffin!

Happy New Year, everyone!! I have a new dilemma to share!

I know it’s really great that there are things so special to you that you want to pass them along to your children and grandchildren….but seriously…..you have to think, “Will they want this shit?”

Take, for example, the Lenox bird collection, that I know was an expensive bite out of the budget that my husband provided for his mom….I just spent an entire afternoon, matching each bird to the corresponding certificate of authenticity, photographing, and listing them on Ebay. I sold one, but by the time I packed it and shipped it, I lost money.

Kathy, a very close friend of mine offered me $25.00 for all of them so that her husband can use them as target practice for a gun he purchased recently. Tempting. I can’t help but thinking that someone out there appreciates these dust collecting birdies.

Moving Steve’s mom into an assisted living facility was quite the undertaking, especially as her daughter-in-law….I was given the dubious job of sorting through countless pairs of stockings, some still in the original package, hair ties and bows, denture boxes, and an assortment of long forgotten treasures packed away for safe keeping. Year after year, I would go to the dollar store for holiday bags and have Salina pack up these treasures as gifts, but she didn’t want to part with anything. You really have no idea….So for now, I’m stuck with these birds…lots of them.

My parents, at 89 and 91, have kept those special to them in a super organized way. When I visit, I love how my mom is always trying to give me her things. Although they take great pleasure in sharing, I want my mom and dad to keep and enjoy the memories they bring, rather than taking them away. I also know that the beautiful and valuable belongings of my parents are far from junk and someday will value and cherish the sentiment and memories.

On a return flight from Cancun, I vividly recall the pilot saying, “I hope you enjoyed your vacation and have carefully packed all of your souvenirs that will be at your garage sale someday.” So….note to self….Only buy and keep what gives you pleasure and let it go when it no longer has meaning.

Speaking of giving pleasure, I found this twist on an old favorite. Get ready for this delicious and EASY twist on your favorite Chicken Parmesan recipe!

Chicken Parmesan Meatloaf Muffins

Makes 12 Muffins

INGREDIENTS:

  • 1 ½ lbs raw ground chicken breast or turkey.processor and run until ground)
  • 2 large egg
  • 6 tablespoons panko or breadcrumbs
  • ¾ teaspoon dried basil
  • ¾ teaspoon dried thyme
  • ¾ teaspoon oregano
  • 2 garlic cloves, minced
  • ½ a small finely chopped onion
  • ¾ teaspoon salt
  • 1/3 teaspoon black pepper
  • ¾ cup Parmesan cheese
  • ¾ cup pasta sauce
  • ¾ cup reduced fat shredded Mozzarella cheese
  • Optional: dried parsley, oregano or basil for garnish

DIRECTIONS:

  1. Pre-heat the oven to 350. Lightly mist a muffin tin with cooking spray and set aside.
  2. In a large bowl, combine the ground chicken, egg, egg whites, breadcrumbs, basil, thyme, oregano, garlic, onion, salt, pepper and Parmesan cheese and lightly mix together. Do not over handle.
  3. Form the meat mixture evenly into the 12 cups of your prepared muffin tin. Spread the pasta sauce evenly over the tops of each muffin. Bake for 20 minutes and remove from the oven. Top each muffin with about a tablespoon of shredded cheese and then return to the oven for 2-3 minutes until the cheese is melted. Garnish if desired.

FLY EAGLES FLY! And a few great Cooking For a Crowd Recipes!

WOW!! What a game!! The game, the halftime show, the commercials….all so great! I think my favorite part was Justin Timberlake’s tribute to Prince and HARMONIZED!!!!

We did end up with some last-minute company (family) and fortunately, they aren’t staying for the Winter Olympics Opening Ceremony on Friday 😳? Chile is always a great crowd go to for me, but if chile doesn’t seem to rock your taste buds, and you are serving a crowd, check out this 8 layer lasagna! The Secret is the Borsin Cheese in the bechamel sauce! Holy cheese balls, Batman! Put this recipe in your lineup for a winning event!

8-LAYER LASAGNA

TURKEY LASAGNA

Both the meat and béchamel sauces can be made the day before assembly and chilled. The assembled lasagna may also be frozen—thaw before baking.

MAKES ONE 9X13X3″ 

FOR THE MEAT SAUCE:

  • 11/2 lb. ground chuck
  • 11/2 lb. ground mild Italian sausage ADD:
  • 2 cups yellow onion, diced
  • 2 T. garlic, minced
  • 2 T. tomato paste
  • 2 t. each dried basil, thyme, and oregano
  • 1/2 t. red pepper flakes
  • 1 bay leaf

CALORIE CUTTER….Use ground chicken or turkey and chicken or turkey sausage!

STIR IN; SIMMER:

  • 1 can (28 oz.) crushed tomatoes in puree
  • 1 can (14.5 oz.) diced tomatoes, drained
  • 3/4 cup chicken broth or water  + 2 T. balsamic vinegar

SHORTCUT……..Skip the tomatoes & broth….Add a jar of your favorite ready-made pasta sauce…AHHHHH!!

FOR THE BÉCHAMEL

  •  1/4 Cup unsalted butter
  • Salt and pepper to taste
  • 1/3 cup all-purpose flour
  • 3 cups whole milk
  • 10 oz. Boursin cheese,
  • 8 oz. frozen chopped spinach 1 egg, beaten

1 lb. oven-ready lasagna sheets, parboiled. *Careful….these guys stick together, so keep them separated.

1 lb. fresh mozzarella, thinly sliced 6 oz. Parmesan cheese, grated

 

Preheat oven to 400° with rack in the center.
Brown the meats in a large saute pan over medium-high heat; spoon off as much of the fat as possible. Add onions, garlic, tomato paste, and seasonings. Saute until onion softens, about 8 minutes.

Stir in both types of tomatoes, broth, vinegar, salt, and pepper. Simmer over medium heat until most of the liquid is evaporated, about 10 minutes; set aside.
Saute onion for the béchamel in melted butter in a saucepan over medium heat. Add onion, cayenne, and nutmeg; cook until onion softens, about 5 minutes. Stir often to prevent scorching.

Stir in flour to coat; cook 2 minutes. Gradually add milk, stirring until smooth. Simmer until thickened, about 5 minutes. Add Boursin in small pieces and whisk until smooth; season with salt. Set aside 1 cup béchamel for the top of the lasagna. Cool remaining sauce for 10 minutes. Whisk in frozen spinach and egg. Prepare lasagna sheets +  have both cheeses ready. Assemble lasagna alternating layers ending with bechamel and parmesan cheeses.

Bake uncovered for 40–45 minutes, or until bubbly and top is golden. Allow lasagna to rest 20–30 minutes before cutting and serving.

NINJA BLACK WITH FOOD

LEFTOVERS? Easy….make Lasagna Soup. My Steve used to make ‘Refridgerator Management Soup on Sundays. We were never sure what was in it and I have to admit…a little scary sometimes. Well…..the snowstorm came and you have a TON of leftover lasagna……OH….. So, when life gives you too much lasagna…make lasagna soup!

Here is a delicious recipe for lasagna soup, and if you do have leftover lasagna….Check out the verson of “Leftover Lasagna Soup!”

LASAGNA SOUP

(Leftover lasagna soup to follow!

Makes 6 servings (8 cups) Total time: 45 minutes

BROWN:

  • 1  lb. bulk Italian sausage

  • 2  cups chopped onions

  • 1  cup diced carrots

  • 2  cups sliced button mushrooms

  • 2 Tbsp. minced fresh garlic

ADD:

  • 4 cups low-sodium chicken broth
  • 1 can chopped Italian-style stewed tomatoes in juice (14.5 oz.)
  • 1  cup dry mafalda pasta
  • 2  cups chopped fresh spinach
  • 1 cup diced provolone or part-skim mozzarella
  • Shredded Parmesan
  • 1 Tbsp. thinly sliced fresh basil

Brown sausage in a large saucepan over medium-high heat. Add onions and carrots; sauté 3 minutes. Stir in mushrooms and garlic and sauté 3 minutes more.

Add broth and tomatoes; bring to a boil. Stir in pasta and simmer until cooked, about 10 minutes. Add spinach and cook until it wilts, about 1 minute.
To serve, place diced cheese
in each serving bowl, then ladle soup over to melt. Garnish servings with Parmesan and basil.

LEFTOVER LASAGNA SOUP

INGREDIENTS

  • 4 C. Low sodium chicken brother
  • 1 can chopped Italian style stewed tomatoes in juice
  • Leftover lasagna (refrigerated or at room temperature)

DIRECTIONS

  1. Place broth in a pot. I prefer to use ready made chicken stock which is more flavorful than broth.
  2. Separate the layers of the lasagna keeping the cheese in a separate pile.
  3. Cut the noodle layers  into bite size pieces and add everything to the broth except the cheese.
  4. Cut the cheese up into bite size pieces and place in individual serving bowls.
  5. Ladle warm soup over the cheese & serve!

  • 1 T. Worcestershire sauce
  • salt + pepper to taste
Make the Rub:
  • 1 T. each brown sugar + chile powder
  • 1 t. each kosher salt, black pepper + garlic powder
  • 1/4 t. cayenne pepper
  1. Trim 3 lb. boneless, skinless, chicken breasts, coat with rub and place in a 4-6 qt. slow cooker.
  2. Add 1/2 C. minced onion and sauce to the slow cooker.
  3. Cook on high for 3 hours until chicken is fork tender.
  4. Transfer the chicken to a cutting board and shred.
  5. Return shredded chicken to the slow cooker, toss with sauce & serve on kaiser rolls with slaw.

Jalapeño Slaw

Two great versions of this delicious twist on coleslaw from my favorite Cuisine Magazine…..No need to purchase slaw dressing! One, made with yogurt, super creamy and the other made with a spicy and refreshing vinaigrette. Try them both!

VERSION 1: Creamy Jalapeño Slaw

COMBINE:

  • 1 bag coleslaw mix
  • 1/2 C. chipped fresh parsley
  • 1/2 C. shredded carrot
  • 1/2 C. finely chopped red onion
  • 1/4 C. finely chopped and seeded jalapeno* 

*Add the seeds for a spicier slaw

WHISK + toss with coleslaw mix , cover & chill 1 hr.

  • 3/4 C. plain yogurt
  • 1 T. white vinegar
  • 1 T. minced fresh garlic
  • 1/2 t. ground cumin
  • salt & pepper to taste

3 ULTIMATE COMFORT FOOD RECIPES

So, what exactly is comfort food? Is it fattening delicious food that sticks to your ribs (and everywhere else) leaving you sitting on the sofa in a wonderful food coma? Is it food that conjures up warm childhood memories of Sunday night dinners in Mom’s kitchen while the snowflakes fall to the ground? Quite possibly both.

I kiddingly crown my husband, Steve, the Comfort Food King. Meatloaf, fried bologna sandwiches, anything covered with melted Velveeta cheese, fried chicken with mashed potatoes, and beef jerky are among his faves. Oh…and pies, and cookies, and don’t forget the layered jello mold! He does, however,  eat pretty healthy for the most part.

It is interesting to hear other’s definition of comfort food. The topic of conversation during various parts of my step class typically ranges from food to shopping. During our cool down the other day, comfort food was the topic.  Lisa, who recently moved here from England, had never heard of meatloaf or fried bologna sandwiches, but she was quick to recommend macaroni and cheese which we all hummed with approval. Gina and Barb showed deference to the bologna sandwiches, and Gina chimed in with her Italian ancestry voted for pasta. Barb offered a grilled muenster cheese sandwich with tomato soup. All the ladies agreed that comfort food is actually  just that; ‘feel good food.’

Recently, Steve and I attended a friend’s comfort food dinner party. Each guest was asked to bring a comfort food dish.  The variety was an interesting range of everything from beef short ribs with polenta to chicken noodle soup. I came to the conclusion, after my quite unscientific study of comfort food, that it is personal.

Today, I have a distinct inner conflict about dinner as I watch the snowflakes fall at the very beginning of spring. Do I look forward to the coming of summer and my commitment to try to fit into last summer’s clothes by exploring dinner salad recipes or say screw it and make a delicious cheese stuffed meatloaf with mashed potatoes worry about the clothes later..? The meatloaf wins as well as some other comfort food faves to add to the list as well as two wonderful pot pies; seafood & chicken. Check these out….

 

MOZZARELLA STUFFED MEATLOAF

Flavorful ground beef stuffed with ooey gooey mozzarella cheese.
Serves 4 to 6

Ingredients
1 pound ground beef (85%)
1 cup bread crumbs
1 tsp dried basil
1 tsp dried oregano
1 tsp dried parsley
1 tsp salt
½ tsp black pepper
½ cup milk
2 TB worcestershire sauce
8 oz fresh mozzarella, sliced
1 cup ketchup
¼ cup brown sugar, tightly packed
1 TB worcestershire sauce
1 TB red wine vinegar
2 cloves garlic, crushed
⅛ tsp salt
pinch cayenne pepper

LET’S MAKE ITI

  • Preheat oven to 350 degrees. Lightly grease a glass baking pan (9×13) with nonstick cooking spray.
  • In a large mixing bowl combine ground beef, bread crumbs, basil, oregano, parsley, salt, pepper, milk, and worcestershire sauce.
  • Divide meat in half. Shape one half of the meat into the bottom half of the loaf and place in prepared pan.
  • Place mozzarella slices down the center, leaving ½ inch around the ends and sides.
  • Shape remaining half of meat as the top half of the loaf, sealing the edges. This is a free-form loaf so it doesn’t need to be perfect.
  • In a small mixing bowl whisk together ketchup, brown sugar, worcestershire sauce, red wine vinegar, garlic, salt, and cayenne pepper. Pour half of this mixture over the meatloaf, reserving the remaining half for later.
  • Bake in the preheated oven for 45 minutes.
  • After 45 minutes, remove from oven and pour the remaining sauce over the loaf.Increase temperature to 400 degrees and bake for an additional 15 minutes.
  • Let rest 5 to 10 minutes before serving.

SEAFOOD POT PIE with PUFF PASTY

FOR THE BROTH

COMBINE:

  • 2  lobster tails (5–6 oz. each)
  • 3  oz. large shrimp
  • 1/2 cup russet potato, peeled, diced 1/4 cup carrot, diced

FOR THE FILLING

SWEAT IN 2 T. UNSALTED BUTTER

  • 1/4 cup leeks, diced
  • 1 t. garlic, minced

WHISK IN:

  • T. all-purpose flour

DEGLAZE WITH; ADD:

  • 2 T. dry sherry
  • 1/2 cup reserved seafood broth
  • 1/4 cup heavy cream
  • 1/4 cup frozen peas

 

REMOVE FROM HEAT AND STIR IN:

  • Reserved seafood and vegetables
  • 2 oz. lump crab meat
  • 1 t. fresh lemon juice
  • 1 t. chopped fresh chives
  • 1 t. chopped fresh tarragon
  • Salt, white pepper, and cayenne to taste

FOR THE PASTRY TOP

BRUSH WITH:

  • 1 sheet puff pastry, thawed 1 egg, lightly beaten with
  • 1 T. water

 

  • Preheat oven to 425°; line a baking sheet with parchment paper.
  • Prepare lobster tails, cutting both sides of the shell (not the meat) down to the fan. Remove meat, reserving shells for broth. Peel and devein shrimp, then halve lengthwise; reserve meat and shells.
  • Combine seafood shells, potato, and carrot in a saucepan. Cover with water, bring to a boil, and simmer until vegetables are fork tender, 10–15 minutes. Drain, reserving vegetables and 1/2 cup broth; discard shells and remaining broth.
  • Sweat leeks and garlic in butter in a saucepan over medium-low heat until leeks are translucent, about 5 minutes. Whisk in flour and cook 1 minute. Deglaze with sherry. Add reserved broth, whisking until smooth and thickened; stir in cream and peas.
  • Off heat, stir in reserved seafood and vegetables, crab, lemon juice, herbs, and seasonings. Mixture will be very thick.
  • Prepare puff pastry, rolling out on a floured surface to 1/8″ thick. Trim around a 21/2-cup ovenproof dish so the pastry is 3/4″ larger than the diameter of the dish.
  • Cut vents in the pastry with a knife so steam can escape. Transfer filling to the dish and top with the pastry piece. Trim excess pastry, crimp edges, then brush dough with egg wash.
  • Bake pot pie on the prepared baking sheet until top is golden and filling is bubbly, 20–25 minutes.

TURKEY POT PIE with PHYLLO CRUST

Makes 4 servings

CHICKEN POT PIE

INGREDIENTS

  • 8 oz.cremini or button mushrooms, quartered
  • 1 Tbsp. minced fresh thyme
  • 6 Tbsp. unsalted butter
  • 1/2 cup all-purpose flouR
  • 1/2 cup dry sherry
  • 2 cups low-sodium chicken broth
  • 1  cup whole milk
  • 2  tsp. fresh lemon juice
  • Salt, black pepper, and dry
  • sherry to taste
  • 2 cups chopped cooked chicken
  • 2 cups frozen mixed vegetables, thawed and patted dry
  • 1/2 cup frozen pearl onions, thawed and patted dry
  • 4 Tbsp. each unsalted butter and olive oil
  • 16 sheets phyllo dough, thawed to room temperatureMAKE IT!
  • Preheat oven to 400°. Line a baking sheet with foil.
  • Cook mushrooms and thyme in 6 Tbsp. butter in a sauté pan over medium heat until browned and liquid nearly evaporates, about 10 minutes. Stir in flour and cook 1 minute.
  • Deglaze pan with 1/2 cup sherry; cook until nearly evaporated. Whisk in broth and milk; cook until thickened to desired consistency, 10–12 minutes.
  • Add lemon juice; season with salt, pepper, and sherry.
  • Transfer mushroom mixture to a large bowl. Stir in turkey, mixed vegetables, and onions.
  • Divide mixture among four  baking dishes arranged on prepared baking sheet.
  • Heat 4 Tbsp. butter with oil in microwave until butter melts. Place a phyllo sheet on a flat surface; cover remaining sheets with a damp towel to keep them from drying out.
  • Lightly brush phyllo sheet with butter-oil mixture; roll into a loose tube. Repeat brushing and rolling with 3 more phyllo sheets, then starting at outer edge, place 4 phyllo tubes end to end in a spiral pattern on top of filling. Repeat phyllo steps for each pot pie. Drizzle any remaining butter- oil mixture over phyllo or coat with nonstick spray.
  • Bake pies until crust is golden and filling is bubbly, about
    20 minutes. Let pies cool 5–10 minutes before serving.

Depending upon the width of your dishes, the number of phyllo sheets needed may vary by one or two.

Friends LOVE to bring something, so why not have a Chili cook off and have everyone bring a crockpot of their favorite chili OR set up a great chili bar of your own, add a plate of cookies and a self serve bar. It’s a party!

One of my favorite chili recipes comes from a local Ohio chain of restaurants called “Skyline Chili.” The recipe is a copy but pretty damn close and pretty damn delicious. This is how you order it up or as they call it “ways.”

CINCINNATI CHILI……THE RECIPE!

Serves 4

CHOP TOGETHER:

2 small yellow onions, chopped 5 cloves garlic
2 lb. ground round (or l lb. ground round & 1 lb. ground chicken or turkey)

ADD:

2 Tbsp.each unsweetened cocoa powder, Worcestershire sauce, and cider vinegar

1 Tbsp. each chili powder, tomato paste, and sugar

2 tsp. ground cumin

1 tsp. each ground cinnamon and celery salt

1/2 tsp. each ground allspice and cayenne pepper

1/4 tsp. ground cloves
2 cups water
1 can tomato sauce (15 oz.)

SERVE IT UP

Cooked spaghetti Shredded Cheddar Chopped red onions

Pulse yellow onions and garlic in a food processor until minced. Add ground round and process until paste-like; transfer to a large sauté pan over medium-low heat. Cook mixture until meat is no longer pink; drain and return to pan.

Add cocoa, Worcestershire, vinegar, chili powder, tomato paste, sugar, cumin, cinnamon, celery salt, allspice, cayenne, and cloves; cook 5 minutes. Stir in water and tomato sauce; bring mixture to a simmer and cook until slightly thickened, about 25 minutes.

Serve chili on spaghetti topped with Cheddar and red onions. (Optional red kidney beans drained and warmed)

Slow-cooked with beef, poblanos, jalapeños & onions. Topped with 3-cheese blend.

  • 1 pound ground beef
  • 1 (14.5 ounce) can Italian-style stewed tomatoes
  • 1 (15 ounce) can light red kidney beans, drained
  • 1 onion, chopped
  • 1 clove garlic, minced
  • 1 (8 ounce) can tomato sauce
  • 1 1/2 fluid ounces tequila
  • 1 tablespoon chili powder
  • 1 1/2 teaspoons ground cumin
  • 1 teaspoon salt
  • 1/2 teaspoon cayenne pepper

Brown the ground beef in a large pot over medium heat, breaking it up with a spoon while it cooks; drain. Stir in the tomatoes, kidney beans, onion, garlic, tomato sauce, tequila, chili powder, cumin, salt, and cayenne pepper; simmer 20 minutes.

Last but not least…..Try this creamy flavorful twist on the usual bowl of chili!

WHITE CHICKEN CHILI

Serves 4

 

MELT:

4 Tbsp. unsalted butter

2 cups diced white onions

1 Tbsp. minced fresh garlic

1 Tbsp. ground cumin

STIR IN:

1/4 cup all-purpose flour

2 cups low-sodium chicken broth

2 cups half-and-half

2 cups chopped cooked chicken

1 can navy beans (15 oz.), drained and rinsed

1 can diced jalapeños (4 oz.)

Juice of 1/2 a lime Salt to taste

Diced fresh tomatoes and fresh cilantro leaves

Melt butter in a pot over medium heat. Add onions, garlic, and cumin; sweat, partially covered, until onions soften, 10 minutes. Stir in flour; cook 2 minutes. Stir in broth, scraping up any brown bits, then bring to a simmer. Add half-and-half and chicken; simmer chili until thick, 5 minutes. Stir in beans, jalapeños, and lime juice; season with salt. Garnish chili with tomatoes and cilantro.

 

THEN THERE’S THE BAR……Set it and forget it!

BLOODY MARY & MIMOSA BAR

OH Yeah!! That yummy GEORGIA PEACH COBBLER…..

Ingredients

1cup Original Bisquick™ mix
1cup milk
1/2teaspoon ground nutmeg
1/2cup butter or margarine, melted
1cup sugar
1can (29 ounces) sliced peach, drained or 3 ripe fresh peaches sliced.
Directions

1 Heat oven to 375ºF.
2 Stir together Bisquick mix, milk and nutmeg in ungreased square baking dish, 8x8x2 inches. Stir in butter until blended. Stir together sugar and peaches; spoon over batter.
3 Bake 50 to 60 minutes or until golden.

WALKING TACOS

You know, I have never heard of a walking taco until I was on a recent visit to Lubbock, Texas. The airport was an experience in itself. 

I had heard that everything in Texas is big, but I just didn’t have a clue exactly what that meant. Surrounded by belt buckles, leather accessories,  Jumbo Texas Fly Swatters, 61qYNzwytXL._SL1200_and cowboy hats of every shape, size & color, I encountered a FRITO PIE STAND!  wild-game-chili-pie

The guy at the stand looked up at me, smiled a crooked smile and announced in his very southern, southern, drawl, “Get your tastebuds ready to buckle up, Little Lady!  What can I get ya?”

Eyeing the spicy chili, jalapeños, and coleslaw, and knowing I was about to board a small plane, I began to rethink my lunch choice. I imagined those poor people around me as my stomach began to rumble and thought better of it.

 “Wellllll,” I politely answered, “I have a flight, so I’m not sure I have the time to eat.”

“I’m happy to fix that!” he pressed on. He proceeded to open a small bag of fritos, and piled on the chili, onions, coleslaw and sour cream, put a fork on top and said, “There you go! On the House!” I graciously took the bag, tipped the guy, and thought to myself, “I need to at least taste this…..” AMAZING!

My Steve LOVES fritos and chili, so I knew he would love this. I hurried back to the stand and asked the guy to make me a few to go, which he was more than happy to oblige!

What happened next is….a Laura story……

Entering the plane, I put the bag of frito pies to go in the overhead bin, making sure the bag was tied tight at the top. Sitting next to me was a young man dressed in a crisp white dress shirt and jeans. As he was telling me about his recent job interview, mid sentence he sniffed his sleeve.  He apologized for his smell, as he had been in the same shirt all day, and had nervous sweat during the interview. This poor guy thought he had B O and he was SO relieved when I told him that it was my fruit pies in the overhead bin! I offered to share one, which he declined, but told him if the plane gets delayed, we will have food!

BUFFALO CHICKEN FRITO PIE

Ingredients
1 cup chicken broth
2 cups rotisserie chicken, 1” pieces
1 teaspoon season salt
½ cup frank’s hot sauce or siracha
¼ cup cream
¼ cup butter
½ cup Mexican cheeses
1 bag FRITOS® Original Corn Chips (do not portion)
3-4 tablespoons ranch dressing
¼ cup tomatoes, diced into ¼ inch pieces
¼ cup green onions, chopped into ¼ inch pieces & sliced jalapeños
GOES GREAT WITH…
FRITOS® Original Corn Chips

Instructions
Add broth and chicken to sauté pan, then season with salt.
Heat until broth is reduced by a little more than half
Add hot sauce and cream, then let reduce
Add butter and half the cheese, and incorporate.
Pour FRITOS Corn Chips into a bowl and top with chicken mixture and remaining cheese.
Drizzle with ranch dressing, then top with green onions, sliced jalapeños  and tomatoes and serve immediately.

 

WALKING TACO

Ingredients
1 lb ground beef
1 lb ground chicken or turkey
1 ea white onion, diced
2 tbsp garlic, chopped
2 bottles light beer
2 tbsp corn oil
3 tbsp cumin
1 tbsp garlic powder
3 tbsp light chili powder
1 tbsp paprika
32 oz ground tomatoes
1 cup water
Salt and pepper

FOR GARNISH:
2 2 oz bags FRITOS® Original Corn Chips
Sour cream
Shredded Vermont cheddar or mexican shredded cheese
Scallions & prepared coleslaw & sliced jalapeños
GOES GREAT WITH…
FRITOS® Original Corn Chips

 

Instructions
1. Saute Onions and Garlic in oil.
2. Add all ground meats and beer.
3. Cook, until all meat is cooked through.
4. Add spices, Tomatoes, Water, and beef base.
5. Let cook for minimum of one hour over low heat.
6. Taste and add salt and pepper, if needed.

TO PLATE THE DISH (or fill the bag):
1. Open snack size bags of FRITOS Corn Chips 
2. Ladle hot chili on top.
3. Garnish with sour cream, coleslaw, sliced jalapeños cheddar cheese and scallions. Top it with a fork!

1 pound ground beef
1 medium onion, chopped
1-1/2 cups water
1 can (6 ounces) tomato paste
1 envelope taco seasoning
6 cups tortilla or corn chips
4 to 5 cups shredded lettuce
9 to 10 pitted large olives, sliced lengthwise
2 cups (8 ounces) shredded cheddar cheese
2 cups cherry tomatoes, halved

Directions
In a large skillet, cook beef and onion over medium heat until meat is no longer pink; drain. Stir in the water, tomato paste and taco seasoning. Bring to a boil. Reduce heat; simmer, uncovered, for 20 minutes.
Place chips in an ungreased 13-in. x 9-in. dish. Spread beef mixture evenly over the top. Cover with lettuce. For each star, arrange five olive slices together in the upper left corner. To form stripes, add cheese and tomatoes in alternating rows. Serve immediately. Yield: 8 servings.

3 cloves garlic, minced
¾ cup beer
⅓ cup honey
1 tsp red pepper flakes
1 tsp Dijon mustard
¼ cup low sodium soy sauce
1 tbsp olive oil
4 chicken breasts, cut into small cubes
cilantro for garnish

Cut chicken in small pieces, about 1½ inch cubes.
In a medium bowl whisk all the ingredients together. Add chicken, there should be enough marinade to cover the chicken. Cover with plastic wrap and place in fridge. Let it marinate for at least 2 hours to 24 hours.
Fire up the grill.
Thread chicken on skewers, about 5 pieces per skewer. Do not throw away the leftover marinade.
Place chicken skewers on grill and turn every couple minutes or so, at the same time brushing some of the leftover marinade over the chicken. Grill until chicken is cooked through.
Garnish with cilantro and serve.

3 tablespoons olive oil (or other oil)
1 packet ranch seasoning

Wash, pat dry, and quarter potatoes (for larger ones you may need to chop into slightly smaller pieces, about 1 inch pieces).
Place chopped potatoes in a large resealable bag. Drizzle olive oil into the bag, seal, and toss to coat the potatoes.
Open the bag, sprinkle in half of the ranch seasoning, seal, toss to coat, then repeat with remaining seasoning.
Thread potatoes on skewers. Grill over low heat for 10-20 minutes (depending on your grill and the size of your potatoes) turning throughout to ensure even cooking. When fork-tender, remove from grill and serve warm with cold ranch dressing if desired. Enjoy!

2 cups cubed watermelon, 1-inch cubes
1 cup blueberries
1 cup thin jicama strips
1/2 cup crumbled feta cheese
For the Honey Lime Dressing:

1/4 cup olive oil
Juice of 2 large limes
1 tablespoon honey
1 tablespoon finely chopped fresh mint leaves
Pinch of sea salt

Fourth of July Trifle! (from The Girl Who Ate Everything on Pinterest)

2 cups heavy cream
½ cup white sugar
2 cups milk
2 (3.4 ounce) packages instant cheesecake pudding mix
2 teaspoons lemon juice
½ cup sour cream
2 (10.75 ounce) packages prepared pound cake
2 (16 ounce) carton strawberries, sliced
strawberries for garnish
blueberries for garnish
Instructions
In a medium bowl, combine cream and white sugar and beat until stiff peaks form. Set aside. You want a stiffer whipped cream for trifle so that it holds up over time.
In another bowl beat cheesecake pudding mixes with milk for 2 minutes or until thick. Mix in sour cream and lemon juice. Fold in one cup of the sweetened whipped cream.
Slice pound cake into one inch cubes.
In a trifle bowl, start by layering ¼ of the pound cake on the bottom of the trifle bowl (A large glass bowl can be used if you don’t have a trifle bowl). Next, layer ¼ of the pudding mixture followed by a layer of ¼ of the strawberries. To make trifle look presentable make sure each layer is distinct and separate especially on the sides of the bowl. Repeat layers four times or until bowl is almost full.
Garnish the top of the trifle with the remaining whipped cream, strawberries, and blueberries.
Chill in refrigerator for at least 4 hours.

EASY & FLAVORFUL MEALS…Winner, Winner #Chicken Dinner!

Winner, winner, chicken dinner! Have you ever wondered where this phrase comes? Amazing Siri seems to know all of the answers. Apparently, years ago in Las Vegas, the price of a bet at the roulette wheel was the same price as a chicken dinner. So, yep! Here’s a little known fact from a lesser known person!

So, today’s recipes are two winner, winner, chicken dinners! Easy, yummy and the way a Monday meal should be!

ROASTED CHICKEN & POTATOES with FENNEL

This one dish dinner takes about 10 minutes to prepare and fills your kitchen with a wonderful aroma! Serves 4

                                                                                                    TOSS TOGETHER:

  • 1 1/2 lb. Yukon gold potatoes, thinly sliced
  • 2 fennel bulbs, trimmed & sliced
  • 1 C. shallots
  • 2 T. olive oil
  • salt & pepper to taste
  • 4 skinless, boneless chicken breasts tossed with olive oil & seasoned w/ salt & pepper

COMBINE:

  • 3/4 C. fresh bread crumbs or panko
  • 1/2 C. shredded Parmesan
  • 2 T. fresh thyme
  • 1 T. olive oil
  • Fresh thyme sprigs
  1. Preheat oven to 425*
  2. Toss potatoes, fennel & shallots with olive oil, salt & pepper
  3. Transfer to an oven proof skillet or baking pan.
  4. Roast 40 min.
  5. Combine bread crumbs, Parmesan, thyme, & olive oil.
  6. Season with salt & pepper.
  7. Roast 10 min. more.
  8. Garnish with thyme sprigs.

MOM’S CHICKEN

This flavorful chicken dish is sooo easy to prepare, and the savory, crispy parmesan crust  holds in the moistness of the chicken.

  • 4 skinless, boneless chicken thighs or breasts
  • milk
  • Parmesan Cheese
  • beer or wine (white, rose or red)
  1. Dip Chicken in milk.
  2. Roll in Parmesan cheese.
  3. Bake 450* 30 min.
  4. Pour 1 T. wine or beer on each piece.
  5. Reduce heat to 375* & bake for 20 min.
